{"id":144,"date":"2011-12-11T11:51:29","date_gmt":"2011-12-11T11:51:29","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/11\/jambalaya\/"},"modified":"2011-12-11T11:51:29","modified_gmt":"2011-12-11T11:51:29","slug":"jambalaya","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/chicken-recipes\/jambalaya\/","title":{"rendered":"Jambalaya"},"content":{"rendered":"<p>Jambalaya is a classic one pot meal from the US\/Caribbean.\u00a0 If you are making some to freeze I would just add as many praws as you need for each serving each time rather than reheating them<\/p>\n<p><strong>Serves<\/strong><br \/>\n4<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n1 hour<\/p>\n<p><strong>Ingredients<\/strong><br \/>\nGood slug of olive oil<br \/>\n100g smoked pork sausage such as chorizo or kabanos, sliced<br \/>\n1 tsp paprika<br \/>\n1\/2 tsp smoked paprika<br \/>\n1\/2 tsp hot chilli powder<br \/>\n3-4 cloves garlic, chopped<br \/>\n1 large onion, finely chopped<br \/>\n1 green pepper, finely chopped<br \/>\n1 large stick of celery, finely chopped<br \/>\n1 large chicken breast, chopped<br \/>\nHandful of raw prawns (optional)<br \/>\n1 cup uncooked rice<br \/>\n1 tin of tomatoes (400g)<br \/>\n200ml stock or enough to almost cover the mix<\/p>\n<p><span style=\"line-height: 1.5em;\">Heat oil in ovenproof pan with a lid. Add sauasage and fry until browned and the oil has taken the colour of the sausage. Remove with a slotted spoon and set aside.<\/span><\/p>\n<p>Add onion, green pepper, garlic and celery to the pan and fry for a few minutes on a high heat. Cover, turn down the heat and sweat for a few minutes. Add spices and mix well. Return the sausage to the pan.<\/p>\n<p>Add rice and mix through. Add whatever stock and tomatoes and stir through. Bring to the boil and add herbs and season. Place chicken and prawns (if using) in a layer on top of the rice. Cover and cook on the hob on a low heat until the rice has absorbed all the liquid and the chicken is cooked through- about 20 mins.<\/p>\n<p>Alternatively, cook in the oven at 180C for about the same time.
