{"id":147,"date":"2012-09-25T18:30:44","date_gmt":"2012-09-25T18:30:44","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2012\/09\/25\/nonya-chicken-curry\/"},"modified":"2012-09-25T18:30:44","modified_gmt":"2012-09-25T18:30:44","slug":"nonya-chicken-curry","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/asian-recipes\/nonya-chicken-curry\/","title":{"rendered":"Nonya chicken curry"},"content":{"rendered":"<p><strong>Serves<\/strong><br \/>\n4<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n1 hour<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 large onion, roughly chopped<br \/>\n4 cloves of garlic, chopped<br \/>\na thumb-sized piece ginger, chopped<br \/>\n2-3 tbsp groundnut oil<br \/>\n5 tsp nonya curry powder (see below)<br \/>\n400ml tin coconut milk<br \/>\n700g chicken breasts or thighs, cut into strips<br \/>\n2 sticks lemongrass, outer layers peeled off and bashed lightly<br \/>\nGrated zest of 1 lime<br \/>\n4 tsp tamarind puree dissolved in 8 tbsp boiling water<br \/>\n8 new potatoes, cut in half<br \/>\n10 cherry tomatoes, cut in half<br \/>\nHandful of coriander leaves<br \/>\n1 red chilli, finely sliced<\/p>\n<p>Curry mix<\/p>\n<p>1 tbsp each of cumin, coriander and fennel seeds<\/p>\n<p>1 Tbsp turmeric<\/p>\n<p>1 Tbsp candle or cashew nuts<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p><strong>Make the Nonya curry powder<\/strong><br \/>\nRoast all the spices, apart from the turmeric in a dry pan until fragrant. Allow to cool before grinding in a pestle and mortar or spice grinder. Mix in the turmeric. Keep what you need for this recipe (5 tbsp) and store the rest in an air-tight jar.<\/p>\n<p><strong>Make the curry <\/strong><br \/>\nWhizz the onion, garlic and ginger with 1-2 tbsp water in a small food processor to make a paste.<br \/>\nHeat the oil in a shallow, wide pan over a medium heat and add the onion paste. Fry for a few minutes without letting it colour, stirring regularly. Add the curry powder and fry for 3-4 minutes until the oil is released.<\/p>\n<p>Stir in the coconut milk and bring to a simmer. If you are using chicken thighs, add now (chicken breasts need less cooking so add nearer the end).<br \/>\nThrow in the lemongrass, lime zest, tamarind water and potatoes with a good pinch of salt. Bring to the boil and simmer for 20-25 minutes, uncovered, stirring occasionally. If using chicken breast, add 10 minutes before the end of cooking. Add the tomatoes 5 minutes before the end. Check the potatoes are tender before turning off the heat. Adjust seasoning if necessary.
