{"id":1567,"date":"2014-08-13T20:15:08","date_gmt":"2014-08-13T20:15:08","guid":{"rendered":"http:\/\/loadsofrecipes.co.uk\/?p=1567"},"modified":"2014-08-13T20:15:08","modified_gmt":"2014-08-13T20:15:08","slug":"raspberry-jelly","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/british-recipes\/raspberry-jelly\/","title":{"rendered":"Raspberry Jelly"},"content":{"rendered":"<p>You could always buy raspberry jelly but it&#8217;s just not the same, try making your own, it&#8217;s worth it<!--more--><\/p>\n<p><strong>Serves<\/strong><br \/>\n6<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n4 hours<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n300g Raspberries<br \/>\n100g Strawberries<br \/>\n80g Caster sugar<br \/>\n150ml Champagne<br \/>\n350ml Water<br \/>\n2 Lemon grass stalks<br \/>\nJuice of 1 lemon<br \/>\nGelatine (check the packet, you need enough to set about 750ml, probably 5 sheets)<\/p>\n<p>Place the raspberries and strawberries in a heatproof bowl of simmering water, add the lemon juice and 50g of the sugar. Cover with cling film and leave for 30-40 mins. In a saucepan put the remaining sugar in the water and dissolve, bash the lemon grass and add this then bring to the boil. Take off the heat and leave to infuse for about an hour.<\/p>\n<p>Strain the water into a jug. Pass the berry mixture through a muslin cloth or a sieve lined with bounty workes well too. Soften the gelatine leaves in water as per the instructions on the packet. Now add the berry juice to a clean pan and add the infused water. Bring to the point of boiling then remove from the heat.
