{"id":21,"date":"2011-12-10T20:30:03","date_gmt":"2011-12-10T20:30:03","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/10\/cauliflower-cheese-soup\/"},"modified":"2011-12-10T20:30:03","modified_gmt":"2011-12-10T20:30:03","slug":"cauliflower-cheese-soup","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/british-recipes\/cauliflower-cheese-soup\/","title":{"rendered":"Cauliflower Cheese Soup"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"style15\">1 Medium cauliflower<\/li>\n<li> 75g Gruyere, grated<\/li>\n<li> 75g Mature cheddar, grated<\/li>\n<li> 1 Med onion, chopped<\/li>\n<li> 25g Butter<\/li>\n<li> 275g Potatoes, peeled and diced<\/li>\n<li> 1 pt\/570 mls Vegetable stock<\/li>\n<li> 4 Slices baguette, 1cm thick<\/li>\n<li> 2 tsp Mustard<\/li>\n<li> 1 x 284ml Pot single cream<\/li>\n<li> 1 tbsp Snipped chives<\/li>\n<li> Salt and white pepper<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Break cauliflower into florets. Cut about 110g into tiny florets and cook these in boiling salted water for 3-4 mins until tender. Drain and refresh.<\/p>\n<p>Sweat the onion in the butter gently for 10 mins. Add the uncooked cauliflower, potatoes, stock and bring to the boil. Cover and simmer for 10-15mins until veg is tender.<\/p>\n<p>Spread the baguette slices with the mustard. Mix together half the Gruyere and half the cheddar and sprinkle over the bread. Preheat grill.<\/p>\n<p>Whizz the soup and stir in the cream. Add remaining cheese, the cooked florets and season. Allow the cheese to melt.<\/p>\n<p>Serve the soup and float the cheesy bread on top. Place the bowls on a baking sheet and grill for a couple of mins until cheese is bubbling and golden.
