{"id":216,"date":"2011-10-09T17:07:57","date_gmt":"2011-10-09T17:07:57","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/09\/greek-lamb-with-puntaletti\/"},"modified":"2011-10-09T17:07:57","modified_gmt":"2011-10-09T17:07:57","slug":"greek-lamb-with-puntaletti","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/lamb-recipes\/greek-lamb-with-puntaletti\/","title":{"rendered":"Greek Lamb with Puntaletti"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>650g boneless lamb, shoulder or leg, cubed<\/li>\n<li> 2 large onions, thickly sliced <\/li>\n<li> 2 tbsp lemon juice<\/li>\n<li> 4-5 fresh oregano sprigs<\/li>\n<li> Pinch of dried oregano <\/li>\n<li> 2 tsp ground cumin<\/li>\n<li> 2 tsp ground coriander<\/li>\n<li> 2 tbsp tomato puree<\/li>\n<li> 225g puntaletti (other small rice shaped pasta such as orzo or risoni) <\/li>\n<li> Salt &amp; pepper<\/li>\n<li> Parmesan shavings and chopped parsley to serve<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Preheat oven to 180C. Spread the lamb and onions in a small roasting tin. Sprinkle with the lemon juice, oregano, cumin, coriander, salt, pepper and drizzle with about 2 tbsp olive oil. Mix well with your hands. Roast uncovered for 1 hour.<\/p>\n<p> Mix the tomato puree with 850ml boiling water. Pour over the lamb and cook for a further 30 mins. Sprinkle over the puntaletti, cover and cook for another 30 mins.
