{"id":233,"date":"2012-06-02T16:38:31","date_gmt":"2012-06-02T16:38:31","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2012\/06\/02\/greek-stifado\/"},"modified":"2012-06-02T16:38:31","modified_gmt":"2012-06-02T16:38:31","slug":"greek-stifado","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/beef-recipes\/greek-stifado\/","title":{"rendered":"Greek stifado"},"content":{"rendered":"<p><strong>Serves<\/strong><br \/>\n4<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n2-3 hours<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n<span style=\"font-size: inherit;\">1 kg lamb (shoulder, neck)<br \/>\n<\/span>3-4 tbsp flour seasoned with salt and pepper<br \/>\nOlive oil<br \/>\nA glass of red wine<br \/>\n1 large onion, chopped<br \/>\n2 cloves garlic, chopped<br \/>\n1 x 400g tin of chopped tomatoes<br \/>\n2 bay leaves<br \/>\n1 tsp dried oregano<br \/>\nHalf a cinnamon stick<br \/>\n2 cloves<br \/>\n1 tbsp tomato puree<br \/>\nA handful of fresh parsley, chopped<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Cut the meat into chunks and lightly coat in the flour. Heat about 2 tbsp olive oil in a large casserole pan and fry the meat in batches until it is browned.<\/p>\n<p>Remove from pan with a slotted spoon and set aside. Add onions to the pan and fry for a few minutes before adding the garlic. Return the meat to the pan and add the wine. Cook until wine has all but evaporated.<\/p>\n<p>Add tomatoes, tomato puree, bay leaves, cloves, cinnamon and oregano. Add half a tin of water. Mix well, bring to the boil and simmer gently for 2-3 hours.
