{"id":235,"date":"2011-10-11T17:35:27","date_gmt":"2011-10-11T17:35:27","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/11\/turkish-kofta-kebabs\/"},"modified":"2011-10-11T17:35:27","modified_gmt":"2011-10-11T17:35:27","slug":"turkish-kofta-kebabs","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/rest-of-the-world-recipes\/turkish-kofta-kebabs\/","title":{"rendered":"Turkish kofta kebabs"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>For the kebabs:<\/li>\n<li> 500g lamb mince<\/li>\n<li> 1 onion, peeled and roughly chopped<\/li>\n<li> 3 garlic cloves, peeled<\/li>\n<li> Half a tsp dried mint<\/li>\n<li> Handful fresh parsley<\/li>\n<li> 1 red chilli, de-seeded<\/li>\n<li> <\/li>\n<li> For the minted yogurt:<\/li>\n<li> 200g natural Greek yogurt<\/li>\n<li> Small handful chopped fresh mint <\/li>\n<li><\/li>\n<li><\/li>\n<\/ul>\n<ul>\n<li>For the carrot and cumin salad:<\/li>\n<li> 1 large carrot<\/li>\n<li> 1 turnip (or can just use another 2 carrots) <\/li>\n<li> 1 tbsp sunflower oil<\/li>\n<li> 1 tsp cumin seeds, toasted <\/li>\n<li> Squeeze of lemon juice<\/li>\n<li> Salt and pepper<\/li>\n<\/ul>\n<ul>\n<li>Some ripe tomatoes (chopped or thinly sliced) and lemon wedges to serve<\/li>\n<\/ul>\n<ul>\n<li>&nbsp;<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Make the kebabs:<br \/>\n Put the onion, garlic, chilli and parsley into a small food processor and whizz to a paste. Put this into a bowl along with the lamb mince, dried mint and a generous seasoning of salt and pepper. Using your hands, mix well. Divide into 12 then mould each portion into a sausage shape around a bamboo or metal skewer. Chill for at least 30 minutes (can make the day before).<\/p>\n<p>Make the salad:<br \/>\n Peel the carrot and turnip and cut into thin strips or grate using the rough side of the grater. Toss together in a bowl with the oil, lemon juice and cumin. Season to taste. Set aside.<\/p>\n<p>Make the minted yogurt:<br \/>\n Mix the yogurt with the chopped mint. Season to taste then set aside. (If you don&#8217;t have fresh mint you can use a couple of teaspoons of mint sauce from a jar. Gordon&#8217;s Organic Mint sauce is a good brand.)<\/p>\n<p> Cook the kebabs:<br \/>\n Preheat your grill to its highest setting. Place the kebabs on a grill tray and cook, turning a few times for about 10 minutes or until browned and cooked through.
