{"id":238,"date":"2011-10-22T09:15:28","date_gmt":"2011-10-22T09:15:28","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/22\/chorizo-dumplings-in-chickpea-stew\/"},"modified":"2011-10-22T09:15:28","modified_gmt":"2011-10-22T09:15:28","slug":"chorizo-dumplings-in-chickpea-stew","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/main-course-recipes\/chorizo-dumplings-in-chickpea-stew\/","title":{"rendered":"Chorizo dumplings in chickpea stew"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>300g chorizo, peeled and cut into chunks<\/li>\n<li> 400g lean pork mince<\/li>\n<li> 3 spring onions, sliced<\/li>\n<li> 2 tsp cumin seeds, toasted<\/li>\n<li> 1 tsp salt<\/li>\n<li> 2 tbsp plain flour<\/li>\n<li> Olive oil for frying<\/li>\n<li> 2 onions, sliced<\/li>\n<li> 8 garlic cloves, sliced<\/li>\n<li> 1 tbsp chopped fresh rosemary leaves<\/li>\n<li>400g tin chickpeas, drained and rinsed<\/li>\n<li> 400g butter beans, drained and rinsed<\/li>\n<li> 600ml chicken stock<\/li>\n<li> handful parsley, chopped<\/li>\n<li> 1 tbsp cider vinegar<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Put the chorizo and pork mince in a food processor and pulse for 10 seconds. Add the spring onions, cumin seeds and salt and mix to a chunky paste. Divide into 16 pieces, roll into balls and coat with flour.<\/p>\n<p> Heat a little oil in a large pan with a lid, add the meat dumplings and cook in batches until golden all over. Remove, drain on kitchen paper and set aside.<br \/>\n Add a little more oil to the pan and stir fry the onion over a medium heat until lightly caramelised. Add the garlic and rosemary and cook for a further few minutes. Add the chickpeas, butter beans and the stock and bring to the boil. Cover and simmer for 20 minutes.<\/p>\n<p> Return the dumplings to the pan, bring back to the boil, cover and simmer for 15 minutes.<br \/>\n Stir in the parsley and vinegar off the heat.
