{"id":243,"date":"2011-10-22T09:30:15","date_gmt":"2011-10-22T09:30:15","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/22\/lemon-and-thyme-meatballs\/"},"modified":"2011-10-22T09:30:15","modified_gmt":"2011-10-22T09:30:15","slug":"lemon-and-thyme-meatballs","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/italian-recipes\/lemon-and-thyme-meatballs\/","title":{"rendered":"Lemon and thyme meatballs"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"style15\">2 slices white bread, crusts removed<\/li>\n<li> 2 tbsp milk<\/li>\n<li> 500g pork mince<\/li>\n<li> Finely grated rind of 1 lemon<\/li>\n<li> 2 tsp fresh thyme, chopped<\/li>\n<li> 1 clove garlic, chopped<\/li>\n<li> 1 tbsp olive oil<\/li>\n<li> 1 small onion, chopped<\/li>\n<li> 250g chestnut mushrooms, sliced<\/li>\n<li> 1 red pepper, roasted and chopped<\/li>\n<li> 200ml cr&egrave;me fraiche<\/li>\n<li> 350g rigatoni or other short pasta<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Tear each slice of bread into 4 and soak in the milk for 5 mins. Squeeze out excess milk and put bread into a bowl with the mince, lemon, thyme and garlic; season. Mix well and shape into about 20 balls. Chill until required. <\/p>\n<p> Heat oil in a frying pan, cook meatballs over a medium heat for about 20 mins until cooked and browned all over. Remove and keep warm.<br \/>\n Cook pasta in boiling salted water until al dente. <\/p>\n<p> Add onion to the pan and cook for about 5 mins. Add mushrooms and cook for another 5 mins. Stir in the peppers and cr&egrave;me fraiche. Heat through and check for seasoning.<br \/>\n Drain pasta and add to sauce &#8211; mix through.
