{"id":245,"date":"2011-10-22T09:36:32","date_gmt":"2011-10-22T09:36:32","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/22\/pork-with-peanuts-lime-and-mint\/"},"modified":"2011-10-22T09:36:32","modified_gmt":"2011-10-22T09:36:32","slug":"pork-with-peanuts-lime-and-mint","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/italian-recipes\/pork-with-peanuts-lime-and-mint\/","title":{"rendered":"Pork with peanuts, lime and mint"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>300-400g pork fillet, very thinly sliced<\/li>\n<li> 3 tbsp groundnut oil<\/li>\n<li> 90g unsalted peanuts, roughly chopped*<\/li>\n<li> 4 spring onions, finely sliced<\/li>\n<li> 3-4 cloves garlic, finely chopped<\/li>\n<li> 2 tsp finely chopped fresh ginger<\/li>\n<li> 1 green chilli, finley chopped<\/li>\n<li> Zest of 1 lime<\/li>\n<li> Juice of half a lime<\/li>\n<li>1 tbsp fish sauce<\/li>\n<li> 1 tbsp soy sauce<\/li>\n<li> Half a tsp sugar <\/li>\n<li> 1 tbsp water <\/li>\n<li> Quarter cup each mint and basil leaves, shredded<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>In a small bowl, mix the lime zest, juice, fish sauce, soy sauce, water and sugar. This is the sauce.<\/p>\n<p> Heat a wok until smoking hot. Add the oil to the wok and stir fry the pork over a high heat for a few minutes until the pork has changed colour.<\/p>\n<p> Next, add the garlic, ginger and chilli and stir fry for 1 minute before adding the spring onion and peanuts. Keep the heat high and stir fry everything for a few minutes. Add the sauce and stir fry for another couple of minutes until everything is cooked through and the sauce has reduced to a thick glaze. <\/p>\n<p> Add the mint and basil and mix through.
