{"id":2460,"date":"2020-06-17T17:10:03","date_gmt":"2020-06-17T16:10:03","guid":{"rendered":"https:\/\/loadsofrecipes.co.uk\/?p=2460"},"modified":"2020-06-17T17:10:03","modified_gmt":"2020-06-17T16:10:03","slug":"quinoa-with-tuna-avocado-and-broccoli","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/favourites\/quinoa-with-tuna-avocado-and-broccoli\/","title":{"rendered":"Quinoa with tuna, avocado and broccoli"},"content":{"rendered":"\n<p><\/p>\n\n\n<p>This combination of quinoa with tuna, avocado and broccoli makes an ideal healthy lunch and only around 250 cal per serving<!--more--><\/p>\n<p>Serves<br \/>2<\/p>\n<p>Cooking time<br \/>15 mins<\/p>\n<p>Ingredients<br \/>50g Quinoa<br \/>1 medium carrot<br \/>1 small, Red onion<br \/>1 can, Tinned Tuna In Spring Water<br \/>1 Avocado, Hass Avocado &#8211; Small<br \/>50 g Tenderstem Broccoli<br \/>1 clove<br \/>1 tsp, Olive Oil<br \/>1tsp light soy sauce<br \/>1tsp white wine vinegar<br \/>1 tsp, Salt<br \/>1 gram, chilli flakes<\/p>\n<p><strong>Method<\/strong><br \/>First prepare the quinoa, add to a small pan with 125ml of cold water.\u00a0 Bring up to the boil on a medium heat, stir, reduce to a low heat and cover.<\/p>\n<p>The quinoa will take about 10 mins so plenty of time to prepare everything else.\u00a0\u00a0<\/p>\n<p>Finely chop the garlic, red onion and carrot and add to a bowl.\u00a0 Trim the broccoli and prepare the avocado into chunks.\u00a0 If your not sure how it&#8217;s explained <a href=\"https:\/\/loadsofrecipes.co.uk\/healthy\/poached-egg-with-avocado-spinach-and-spicy-tomato-sauce\/\">here<\/a><\/p>\n<p>When the quinoa is ready drain off any residule water and mix in the bowl with the orher ingredients.\u00a0 This will soften the garlic, carrot and onion.<\/p>\n<p>Wipe the pan and fill with enough boiling water to cover the broccoli.\u00a0 Cook for a few minutes on a high heat, I like a bit of bite in veg but it&#8217;s a personal preference.<\/p>\n<p>Making the dressing by combining the olive oil, vinegar, soy and chilli.<\/p>\n<p>Drain the broccoli and add to the bowl with the avocado.\u00a0 Mix through with the tuna and the dressing and your quinoa with tuna, avocado and broccoli lunch is ready.<\/p>\n<p>Add coriander as an optional extra and serve.<\/p>\n<p>\u00a0<\/p>\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Quinoa doesn&#8217;t taste of much but it is packed with protein and a great alternative to pasta, rice or cous cous.
