{"id":2466,"date":"2020-06-18T15:48:19","date_gmt":"2020-06-18T14:48:19","guid":{"rendered":"https:\/\/loadsofrecipes.co.uk\/?p=2466"},"modified":"2020-06-18T15:48:19","modified_gmt":"2020-06-18T14:48:19","slug":"feta-pomegranate-and-broccoli-salad","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/favourites\/feta-pomegranate-and-broccoli-salad\/","title":{"rendered":"Feta, pomegranate and broccoli salad"},"content":{"rendered":"\n<p><\/p>\n\n\n<p>Fresh healthy summer salad packed with goodness and only 320 calories per serving, ideal for a quick lunch on a hot day<!--more--><\/p>\n<p><strong>Serves<\/strong><br>1<\/p>\n<p><strong>Cooking time<\/strong><br>15 mins<\/p>\n<p><strong>Ingredients<\/strong><br>1 small red onion,&nbsp;<br>Pinch Salt<br>50g Pomegranate Seeds&nbsp;<br>1 tbsp&nbsp; Red Wine Vinegar<br>50g Feta&nbsp;<br>1 Small Cucumber<br>6&nbsp; Lettuce Romaine Heart leaves or something similar<br>25 g Peas &#8211; Fresh or frozen<br>1 clove of Garlic<br>25g Morrisons &#8211; Tenderstem Broccoli <br>Cherry tomatoes<\/p>\n<p><strong>Method<br><\/strong>This is quick and easy , a feta, pomegranate and broccoli salad is a great combination of flavours.&nbsp; I&#8217;ve added other salad items to pack it out but these can be substitute for whatever you like.<\/p>\n<p>Prepare the broccoli by trimming and washing it, place in a small pan of water and cover.&nbsp; Cook the broccoli for a couple of minutes on a high heat and drain.<\/p>\n<p>Finely chop the red onion and add to the bowl, add the brocolli while worm to soften both.&nbsp;&nbsp;<\/p>\n<p>Prepare the other ingredients, I tend to quarter the tomatoes, cut the cucumber into large chunks and crumble the feta.<\/p>\n<p>Wash and shred the lettuce and add to the bowl with the pomegranate seeds and peas (cook the peas obviously if frozen).<\/p>\n\n\n<p>The final part of this feta, pomegranate and broccoli salad is the dressing, mix the olive oil, vinegar and garlic so it emulsifies and mix through the salad.<\/p>\n\n\n\n<p>Ready to serve, for more servings just up the quantity.  Good variations would be to add fresh mint or chilli or both.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Another plant based lunch to try, healthy and a good mix of food groups.
