{"id":248,"date":"2012-11-24T11:00:52","date_gmt":"2012-11-24T11:00:52","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2012\/11\/24\/pork-chop-with-bay-salt\/"},"modified":"2012-11-24T11:00:52","modified_gmt":"2012-11-24T11:00:52","slug":"pork-chop-with-bay-salt","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/british-recipes\/pork-chop-with-bay-salt\/","title":{"rendered":"Pork chop with bay salt"},"content":{"rendered":"<p><strong>Serves<\/strong><br \/>\n4<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n30 mins<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1kg desiree potatoes, peeled and halved<br \/>\nMaldon sea salt and pepper<br \/>\n4 pork chops<br \/>\nolive oil<br \/>\n1 small handful fresh thyme<br \/>\n1 tsp fennel seeds<br \/>\n10 fresh bay leaves<br \/>\n285ml cider<br \/>\n1 tbsp wholegrain mustard<br \/>\n4 tbsp cr\u00e8me fraiche<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Preheat oven to 200C. Parboil potatoes in salted water then drain. Transfer the potaoes to a roasting tray and drizzle with olive oil and sprinkle over thyme and season. Cook in the oven until crispy, turning a few times.<\/p>\n<p>Meanwhile, pound up fennel seeds and bay leaves with pestle and mortar along with 2 tbsp salt until you have a fine green moist paste. Shake through a sieve into a bowl. Rub the chops with olive oil and season with the herb salt on both sides. Preheat a griddle pan until really hot. Add chops and cook for around 3-4 mins on each side. Once cooked, allow to rest for about 4 mins.<\/p>\n<p>Heat cider and mustard in a little pan. Bring to the boil and reduce by half. Add cr\u00e8me fraiche. Bring back to the boil and reduce again until the sauce thickens then remove from the heat.
