{"id":2542,"date":"2020-07-05T09:40:28","date_gmt":"2020-07-05T08:40:28","guid":{"rendered":"https:\/\/loadsofrecipes.co.uk\/?p=2542"},"modified":"2020-07-05T09:40:28","modified_gmt":"2020-07-05T08:40:28","slug":"prawn-and-broccoli-pasta","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/favourites\/prawn-and-broccoli-pasta\/","title":{"rendered":"Prawn and broccoli pasta"},"content":{"rendered":"<p>Prawn and broccoli pasta is an ideal meal for the end of a busy day.&nbsp; Broccoli truly is a superfood and if cooked properly is a great addition to any meal.&nbsp; Try not to overcook vegetables, I&#8217;m pretty sure that&#8217;s what put me off them when I was growing up!&nbsp;<\/p>\n<p><strong>Serves<\/strong><br>2<\/p>\n<p><strong>Cooking time<\/strong><br>20 mins<\/p>\n<p><strong>Ingredients<\/strong><br>250g Fresh or frozen (defrosted) whole <a href=\"https:\/\/loadsofrecipes.co.uk\/tag\/fish-recipes\/\">prawns<\/a><br>150g <a href=\"https:\/\/loadsofrecipes.co.uk\/category\/pasta-recipes\/\">pasta<\/a>, I used spaghetti but short past would work<br>60g broccoli<br>2 cloves of crushed\/chopped garlic<br>1\/2 tsp chilli flakes<br>12 cherry tomatoes, quartered<br>1 tsp red wine vinegar<br>1\/2 tsp salt<br>1\/2 tbsp olive oil<\/p>\n<p><strong>Method<\/strong><br>Prawn and broccoli pasta is quick and easy, feel free to add other vegetables to pad it out, peas, green beans etc. work well.<\/p>\n<p>Put a pan of water on to boil for the pasta, add about a tbsp of salt and add the pasta.<\/p>\n<p>Chop or crush the garlic and add to a pan with the olive oil, do this while the pan is cold.&nbsp; On a low heat fry the garlic until it goes golden, be careful not to burn or it will be bitter.<\/p>\n<p>Add the chopped tomatoes and cook for 3-4 mins, mix through with the garlic.<\/p>\n<p>Slice the broccoli so the stems are chopped up into 1cm dice and the heads are whole.&nbsp; I used tenderstem broccoli for this as I think it tastes better.&nbsp; Add the chopped stems and fry with the garlic and tomato.<\/p>\n<p>Add the chilli and vinegar, I use vinegar in cooking as it is good for you, I&#8217;m not 100% sure on the science yet but will add into a post when i am convinced.&nbsp; In the meantime it&#8217;s a good way to add seasoning.&nbsp;&nbsp;<\/p>\n<p>Cook for about 3 mins, make sure the garlic mixes through the broccoli or whatever vegetables you are using.<\/p>\n<p>Now add the prawns and cook through, they should be pink and plump, don&#8217;t overcook or they will become rubbery.<\/p>\n<p>A couple of mins in to cooking the prawns add the broccoli heads, these will take a couple of mins at most.&nbsp; The whole thing takes about 5-7 mins.<\/p>\n<p>Drain the pasta when cooked (8-10 mins) and add to the pan with the rest of the ingredients.&nbsp; Mix through, check for seasoning and your prawn and broccoli pasta is ready to serve.<\/p>\n<p><\/p>\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Prawns are a great source of protein, this dish is a good balance of nutrients and tastes great<\/p>\n","protected":false},"author":6,"featured_media":2518,"comment_status":"closed","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"_acf_changed":false,"footnotes":""},"categories":[13,14,18,20,23,24],"tags":[],"class_list":["post-2542","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-favourites","category-fish-recipes","category-healthy","category-italian-recipes","category-main-course-recipes","category-mediterranean-recipes"],"acf":[],"_links":{"self":[{"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/posts\/2542","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/users\/6"}],"replies":[{"embeddable":true,"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/comments?post=2542"}],"version-history":[{"count":0,"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/posts\/2542\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/media\/2518"}],"wp:attachment":[{"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/media?parent=2542"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/categories?post=2542"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/sites.askyr.com\/loadsofrecipes\/wp-json\/wp\/v2\/tags?post=2542"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
