{"id":258,"date":"2011-10-22T10:27:34","date_gmt":"2011-10-22T10:27:34","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/22\/spanish-sausage-and-potato-hotpot\/"},"modified":"2011-10-22T10:27:34","modified_gmt":"2011-10-22T10:27:34","slug":"spanish-sausage-and-potato-hotpot","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/main-course-recipes\/spanish-sausage-and-potato-hotpot\/","title":{"rendered":"Spanish sausage and potato hotpot"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>6 pork sausages (good quality ones from the butchers)<\/li>\n<li> 300g potatoes, cut into chunks<\/li>\n<li> 1 red onion, sliced<\/li>\n<li> 2 cloves garlic, chopped<\/li>\n<li> 1 red pepper, chopped<\/li>\n<li> 1 green chilli, chopped<\/li>\n<li> 1 tsp smoked paprika<\/li>\n<li> 1 tsp paprika<\/li>\n<li> Pinch of dried oregano<\/li>\n<li> 300ml chicken stock<\/li>\n<li> 1 tbsp tomato puree<\/li>\n<li> 1 small tin butter beans, rinsed and drained (optional)<\/li>\n<li> Salt and pepper <\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Cut each sausage into 3 or 4 pieces. Heat some olive oil in a large pan, add the sausages and brown on all sides.<br \/>\n Add onion and fry for a few minutes until the onion has softened. Add garlic, chilli, both types of paprika and oregano. Stir through before adding the potato and peppers. Season with salt and pepper.<br \/>\n Add the stock and tomato puree. Mix well, bring to the boil, cover and simmer for 20-30 minutes or until potatoes are tender.
