{"id":266,"date":"2011-10-22T11:13:34","date_gmt":"2011-10-22T11:13:34","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/22\/coconut-prawn-curry\/"},"modified":"2011-10-22T11:13:34","modified_gmt":"2011-10-22T11:13:34","slug":"coconut-prawn-curry","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/curry-recipes\/coconut-prawn-curry\/","title":{"rendered":"Coconut prawn curry"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 cinnamon stick<\/li>\n<li> 1 cardamom pod<\/li>\n<li> 2 tsp mustard seeds<\/li>\n<li> 2 green chillies, chopped<\/li>\n<li> 1 cm piece ginger, chopped<\/li>\n<li> 3 cloves garlic, chopped<\/li>\n<li> 8 curry leaves (fresh or dried) <\/li>\n<li> 4 shallots (or 1 large onion), chopped<\/li>\n<li> 2 tsp turmeric<\/li>\n<li> 1 tsp ground coriander<\/li>\n<li> 1 tsp ground cumin<\/li>\n<li> 2 tbsp tomato puree<\/li>\n<li> 400g tin coconut milk<\/li>\n<li> 250g peeled tiger prawns<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p><strong>This Indian recipe has a lovely creamy sauce. <\/strong><\/p>\n<p> Heat 2 tbsp of groundnut oil in a frying pan over medium heat. Add cinnamon and cardamom, followed by the mustard seeds and cook until they pop and crackle.<br \/>\n Add green chillies, garlic, ginger, curry leaves and shallots and cook for a couple of minutes then add the rest of the spices. Stir all the time. Add 4 tbsp water, the tomato puree and the coconut milk and simmer for 5-10 minutes. Check seasoning.<br \/>\n Add the prawns to the sauce and cook for a few minutes until they are cooked through.
