{"id":272,"date":"2012-06-02T16:43:31","date_gmt":"2012-06-02T16:43:31","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2012\/06\/02\/pea-prawn-and-mint-risotto\/"},"modified":"2012-06-02T16:43:31","modified_gmt":"2012-06-02T16:43:31","slug":"pea-prawn-and-mint-risotto","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/fish-recipes\/pea-prawn-and-mint-risotto\/","title":{"rendered":"Pea, prawn and mint risotto"},"content":{"rendered":"<p><strong>Serves<\/strong><br \/>\n2<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n45 mins<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n200g risotto rice<br \/>\n1 small onion, finely chopped<br \/>\n1 celery stick, destringed and finely chopped<br \/>\n1 clove garlic, sliced<br \/>\n50ml white wine<br \/>\n1 litre chicken stock<br \/>\n2 handfuls cooked prawns<br \/>\n1 cup of frozen peas<br \/>\nFreshly grated parmesan<br \/>\nFew knobs of butter<br \/>\nFlatleaf parsley, finely chopped<br \/>\nFew leaves of fresh mint, chopped<br \/>\nJuice of half a lemon<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Heat the stock in a pan and keep on a low heat.<br \/>\nGently fry the onion and celery in olive oil in a frying pan taking care not to colour. Add a good pinch of salt and stir well until vegetables have softened.\u00a0 Add garlic and fry for a couple of minutes.<br \/>\nAdd rice and mix well with the vegetables so that the grains are well coated in oil and glistening. Add the wine and reduce until almost evaporated.<\/p>\n<p>Then start adding the stock, a ladle at a time, making sure that each ladleful is absorbed before adding the next, stirring well.<\/p>\n<p>Before all stock is added, add peas and prawns. The rice is cooked when it is soft but still with a bite. At the end, add the herbs, butter and some of the parmesan and stir well.
