{"id":273,"date":"2011-10-22T11:38:04","date_gmt":"2011-10-22T11:38:04","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/22\/roast-cod-and-garlic-tomatoes\/"},"modified":"2011-10-22T11:38:04","modified_gmt":"2011-10-22T11:38:04","slug":"roast-cod-and-garlic-tomatoes","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/fish-recipes\/roast-cod-and-garlic-tomatoes\/","title":{"rendered":"Roast cod and garlic tomatoes"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 unpeeled cloves of garlic<\/li>\n<li> 3 tbsp olive oil<\/li>\n<li> 100g black olives<\/li>\n<li> 900g tomatoes, preferably small ones on the vine<\/li>\n<li> 2 medium red chillies, roughly chopped<\/li>\n<li> 3 tbsp pesto, preferably homemade<\/li>\n<li> 2 boneless, skinless cod fillets, each about 450g<\/li>\n<li> Finely grated zest of 1 lemon<\/li>\n<li> 12 slices prosciutto<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Heat oven to 200C. Put the garlic in a roasting tin with 2 tbsp olive oil and roast for 10 mins. Remove from oven and add tomatoes and chillies to the tin and stir. Season.<br \/>\n Spread the pesto over one side of a cod fillet and sprinkle over the lemon zest; season. Lay the other cod fillet on top then wrap ham slices loosely around the fish, tucking in the edges. Season and drizzle over the remaining olive oil.<\/p>\n<p> Put the cod on a rack over the roasting tin. Roast for 20 mins until the fish is cooked and the tomatoes are starting to break up.<br \/>\n Transfer cod to a plate.
