Add the onion and carrot and cover with water. Bring to the boil and boil for 1 minute. Turn off heat and leave to stand for 15 mins. <\/p>\n<p> Drain off 250ml of the fish stock and boil with the fresh herbs for 5 mins.<br \/>\n Remove the herbs.<\/p>\n<p> Melt the butter in a small pan and stir in flour. Gradually add the stock and bring to the boil again.<br \/>\n Transfer to a blender and process, gradually adding the olive oil.
