{"id":28,"date":"2011-12-10T20:30:03","date_gmt":"2011-12-10T20:30:03","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/10\/chickpea-feta-and-mint-salad\/"},"modified":"2011-12-10T20:30:03","modified_gmt":"2011-12-10T20:30:03","slug":"chickpea-feta-and-mint-salad","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/mediterranean-recipes\/chickpea-feta-and-mint-salad\/","title":{"rendered":"Chickpea, feta and mint salad"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 x 400g Tins chickpeas, drained and rinsed<\/li>\n<li>Half a cup extra-virgin olive oil <\/li>\n<li>2 Red onions, finely sliced <\/li>\n<li>2 Red chillies, de-seeded and finely chopped<\/li>\n<li>3-4 Cloves garlic, finely chopped <\/li>\n<li>75ml Red wine vinegar<\/li>\n<li>Handful fresh coriander, chopped<\/li>\n<li>Handful fresh mint, finely sliced<\/li>\n<li>200g Feta, crumbled<\/li>\n<li>4 Spring onions, sliced<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Gently fry the onions until they start to soften, about 7 minutes. Then add the garlic and chilli and continue to fry for a further 5 minutes. <\/p>\n<p>Turn up the heat then add the vinegar and boil until it has evaporated, about 2 minutes. Add the chickpeas to the pan, mix well then turn off the heat. Leave to sit in the pan for a few minutes.<\/p>\n<p>Add the coriander and mint and taste for seasoning. You can leave it at this stage until ready to serve.<\/p>\n<p>When ready to serve, mix through then turn out onto a plate or large flat bowl. Crumble over the feta and sprinkle on the spring onion.
