{"id":280,"date":"2011-10-22T15:28:57","date_gmt":"2011-10-22T15:28:57","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/22\/south-indian-tuna\/"},"modified":"2011-10-22T15:28:57","modified_gmt":"2011-10-22T15:28:57","slug":"south-indian-tuna","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/french-recipes\/south-indian-tuna\/","title":{"rendered":"South Indian tuna"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>500ml groundnut oil<\/li>\n<li> 1 and a half tbsp black or brown mustard seeds<\/li>\n<li> 1 finger length piece of ginger, finely chopped<\/li>\n<li> 3 green chillies, chopped<\/li>\n<li> 16 curry leaves (fresh or dried) <\/li>\n<li> 4 tuna loin steaks, about 1.5cm thick<\/li>\n<li> 1 tbsp turmeric<\/li>\n<li> a quarter of a red onion, very finely chopped<\/li>\n<li> Small handful chopped coriander leaves to serve<\/li>\n<li> Salt <\/li>\n<li> Half a lemon to serve<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Heat the oil in a deep pan. Add the mustard seeds and as they begin to pop, add the ginger, chillies and curry leaves. Remove from heat and cool. (See Cook&#8217;s tip)<\/p>\n<p> Sprinkle the tuna with the turmeric and rub it in. Pour 4 tbsp of the mustard flavoured oil over the fish and marinade it in the fridge for 3 hours. If you are making this ahead of time it can be kept for up to 3 days in the fridge.<\/p>\n<p> Heat a griddle pan and cook the tuna for about 1 minute on each side.
