{"id":295,"date":"2011-10-23T12:39:06","date_gmt":"2011-10-23T12:39:06","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/23\/parsi-eggs\/"},"modified":"2011-10-23T12:39:06","modified_gmt":"2011-10-23T12:39:06","slug":"parsi-eggs","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/curry-recipes\/parsi-eggs\/","title":{"rendered":"Parsi eggs"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1tbsp light olive oil<\/li>\n<li> 1 onion, finely chopped<\/li>\n<li> 2 cloves garlic, crushed<\/li>\n<li> 1 tsp cumin seeds<\/li>\n<li> 1 tsp turmeric<\/li>\n<li> 1 tsp curry powder<\/li>\n<li> 1 red chilli, finely chopped<\/li>\n<li> 2 large tomatoes, chopped <\/li>\n<li> Half a cup of frozen peas<\/li>\n<li> 6 eggs, beaten<\/li>\n<li> Salt and white pepper<\/li>\n<li> Splash of cream (optional) <\/li>\n<li> 1 tbsp chopped coriander or parsley (optional)<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>In a non-stick frying pan, heat the oil and fry the onion, garlic and cumin seeds over a medium heat, stirring occasionally, until soft and golden.<\/p>\n<p>Add the turmeric, curry powder and chilli (you can use a pinch of chilli flakes instead) and stir well.<\/p>\n<p>Next, add the tomatoes and peas and fry for a few minutes until the tomatoes have softened and the peas have defrosted. <\/p>\n<p> Turn the heat down and add the eggs and seasoning. Cook, stirring over a low heat until the egg is just cooked through. It&#8217;s worth taking your time here as the eggs will be nice and creamy.
