{"id":298,"date":"2011-10-23T12:52:43","date_gmt":"2011-10-23T12:52:43","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/23\/spicy-stir-fried-vegetables-indian-style\/"},"modified":"2011-10-23T12:52:43","modified_gmt":"2011-10-23T12:52:43","slug":"spicy-stir-fried-vegetables-indian-style","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/indian-recipes\/spicy-stir-fried-vegetables-indian-style\/","title":{"rendered":"Spicy Stir Fried Vegetables (Indian style)"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>100g whole cashew nuts<\/li>\n<li> 200g mangetout<\/li>\n<li> 200g green beans<\/li>\n<li> 200g baby sweetcorn<\/li>\n<li> 1 head broccoli, broken into florets<\/li>\n<li> groundnut oil for frying <\/li>\n<li> 2 tsp cumin seeds<\/li>\n<li> 3 garlic cloves crushed<\/li>\n<li> 2cm piece of ginger, grated<\/li>\n<li> 2 green chillies, chopped<\/li>\n<li> 1\/2 lemon, juiced<\/li>\n<li> Small handful fresh coriander, chopped<\/li>\n<li> Salt and sugar <\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>This Indian recipe is a great idea for vegetables.<\/p>\n<p> Fry the cashew nuts in a 4 tbsp oil until golden brown, drain on kitchen paper and set aside.<br \/>\n Put the vegetables in a pan of boiling water and cook for a minute. Drain, refresh under cold running water and set aside.<br \/>\n This can all be done ahead of time.<br \/>\n When ready to serve, heat a wok and add 2 tbsp oil. Add the cumin seeds and fry until they crackle. Add the ginger, garlic and chillies and cook for a minute, then add the blanched vegetables and cook for a couple of minutes, stir frying. Season with salt and sugar to taste.
