{"id":317,"date":"2011-10-23T16:11:23","date_gmt":"2011-10-23T16:11:23","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/23\/the-best-cheesecake-recipe\/"},"modified":"2011-10-23T16:11:23","modified_gmt":"2011-10-23T16:11:23","slug":"the-best-cheesecake-recipe","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/british-recipes\/the-best-cheesecake-recipe\/","title":{"rendered":"The best cheesecake recipe"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"style15\">200ml double cream, lightly whipped<\/li>\n<li> 1 vanilla pod<\/li>\n<li> 250g Hob Nob biscuits<\/li>\n<li> 75g unsalted butter<\/li>\n<li> 2 tsp runny honey<\/li>\n<li> 100g cream cheese<\/li>\n<li> 100g creme fraiche<\/li>\n<li> 3 tbsp caster sugar<\/li>\n<li> Grated zest of 1 lime<\/li>\n<li> 2 tsp lime juice <\/li>\n<\/ul>\n<ul>\n<li>Suggestions for toppings:<\/li>\n<li> <\/li>\n<li> Rhubarb<\/li>\n<li> Granny Smith apples<\/li>\n<li> Soft fruits (raspberries, strawberries, blueberries)<\/li>\n<\/ul>\n<ul>\n<li>Stew your fruit of choice with just enough sugar to sweeten and the pod &#8216;shell&#8217; of the vanilla until soft.<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Crush the biscuits to a fine crumb in a food processor (or place in a food bag and bash with a rolling pin). Melt the butter with the honey and add to the crumbs. Stir well until mixed then tip into a springform or loose-bottomed cake tin. Using the back of a spoon, pat down the crumbs until evenly smoothed. Chill until firm. <\/p>\n<p> Scrape the seeds from the vanilla pod and add to the double cream. Whip until softly stiff (soft peaks). Be careful not to overbeat at this stage. Set aside.<\/p>\n<p> In a food processor whizz the cream cheese, creme fraiche, sugar, lime zest and juice until smooth and creamy. Scoop out into a mixing bowl. Fold the vanilla flavoured cream into the cream cheese mixture and spoon into the prepared biscuit base.
