{"id":326,"date":"2013-02-16T17:29:05","date_gmt":"2013-02-16T17:29:05","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2013\/02\/16\/garlicky-pumpkin-risotto\/"},"modified":"2013-02-16T17:29:05","modified_gmt":"2013-02-16T17:29:05","slug":"garlicky-pumpkin-risotto","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/italian-recipes\/garlicky-pumpkin-risotto\/","title":{"rendered":"Garlicky pumpkin risotto"},"content":{"rendered":"<p><strong>Serves<\/strong><br \/>\n6<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n60 mins<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Pesto<br \/>\nlarge bunch of basil<br \/>\n3 cloves garlic, roughly chopped<br \/>\n3 tbsp pinenuts, toasted<br \/>\nolive oil<br \/>\n50g parmesan, grated<br \/>\nRisotto<br \/>\n6 cloves garlic, peeled<br \/>\n1.4 litres hot chicken stock<br \/>\n85g unsalted butter<br \/>\n400g pumpkin or squash (unpeeled weight), peeled, seeded and cut into 1cm cubes<br \/>\n2 tbsp olive oil<br \/>\n1 small onion, finely chopped<br \/>\n400g risotto rice (carnaroli, arborio)<br \/>\n100g pecorino, grated<br \/>\n50g parmesan, grated<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Make the pesto:<br \/>\nPulse the basil, garlic and pinenuts in a food processor to a coarse paste, adding enough olive oil to produce a loose-textured puree. Pour into a bowl and fold in the parmesan.<\/p>\n<p>Cook the garlic:<br \/>\nBlanch the 6 cloves in boiling water for 3 minutes. Drain all the water off then add 200ml of the stock and half the butter. Simmer, uncovered, for about 15 minutes until the garlic is really soft and the stock and butter have reduced to a syrupy glaze. Remove from the heat. <em>(You can do this up to 4 hours in advance). <\/em><\/p>\n<p>Cook the pumpkin:<br \/>\nHeat oven to 200C. Toss the pumpkin cubes with the olive oil, season and roast for 10-15 minutes until just tender.<\/p>\n<p>Make the risotto:<br \/>\nSweat the onion in the remaining butter in a large shallow pan until soft &#8211; about 5 minutes. Tip in the rice, raise the heat and toast the rice until translucent. Lower the heat and add the remaining stock a ladleful at a time, stirring well until the stock is completely absorbed before adding the next ladleful.<br \/>\nOnce the rice is al dente, fold in the two cheeses, garlic cloves and pumpkin.
