{"id":328,"date":"2011-10-23T16:44:44","date_gmt":"2011-10-23T16:44:44","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/10\/23\/pumpkin-risotto\/"},"modified":"2011-10-23T16:44:44","modified_gmt":"2011-10-23T16:44:44","slug":"pumpkin-risotto","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/italian-recipes\/pumpkin-risotto\/","title":{"rendered":"Pumpkin Risotto"},"content":{"rendered":"<p>It&#8217;s hard to beat risotto for comfort food, this pumpkin risotto has a great sweet flavour.\u00a0 The butter and parmesan at the end is essential.<!--more--><\/p>\n<p><strong>Serves<\/strong><br \/>\n2<\/p>\n<p><strong>Cooking time\u00a0<\/strong><br \/>\n40 mins<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Olive oil<br \/>\n2 rashers smoked bacon, finely chopped<br \/>\n1 onion, finely chopped<br \/>\n1 clove garlic, chopped<br \/>\n200g pumpkin, peeled and cut into small cubes<br \/>\n1 litre chicken stock (in a pan on a low heat)<br \/>\n200g risotto rice<br \/>\n100ml white wine<br \/>\nCouple of handfuls of grated parmesan<br \/>\nKnob of butter<br \/>\nSalt and pepper<br \/>\nChopped parsley<\/p>\n<p>In a large frying pan, fry the bacon in a good slug of olive oil unitl just cooked (not crispy). Add the onion and fry on a low heat until soft but not coloured. Next, add the garlic and fry for a minute or two, stirring. Then add the pumpkin and continue frying, stirring frequently, until the pumpkin is soft but not browned.<\/p>\n<p>Add the rice and mix everything together well. Cook until the grains are slightly translucent. Add the wine and allow to almost evaporate. Then start adding the stock, a ladleful at a time. Stir and allow each ladleful to be absorbed into the rice before adding the next. Continue until the rice is cooked but still al dente (about 15-20 minutes).<\/p>\n<p>Remove from the heat and add the parmesan, butter and parsley.
