{"id":33,"date":"2011-12-10T23:36:46","date_gmt":"2011-12-10T23:36:46","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/10\/cream-of-watercress-soup\/"},"modified":"2011-12-10T23:36:46","modified_gmt":"2011-12-10T23:36:46","slug":"cream-of-watercress-soup","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/british-recipes\/cream-of-watercress-soup\/","title":{"rendered":"Cream of watercress soup"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"style15\">1 Onion, finely chopped<\/li>\n<li> 1 Medium potato, peeled and cut into small dice<\/li>\n<li> 25g Butter<\/li>\n<li>A dash of olive oil<\/li>\n<li> Small bag of watercress, roughly chopped (about 4 cups) <\/li>\n<li>A good grating of nutmeg<\/li>\n<li> Salt and pepper<\/li>\n<li> 500ml Vegetable stock<\/li>\n<li> 2-3 tbsp Double cream<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Fry the onion in the butter and oil until soft but not coloured. Add the potato and fry for a few minutes before adding the watercress and nutmeg.<\/p>\n<p> Add the stock and seasoning and bring to the boil. Cover and simmer for 5-10 minutes or until the potato is cooked through (the time will depend on how big or small you have cut your potatoes). <\/p>\n<p> Remove from the heat and blend using a stick blender until really smooth. Return to the heat, ad cream and warm through.
