{"id":362,"date":"2011-11-22T21:36:55","date_gmt":"2011-11-22T21:36:55","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/11\/22\/kale-chorizo-and-bean-hotpot\/"},"modified":"2011-11-22T21:36:55","modified_gmt":"2011-11-22T21:36:55","slug":"kale-chorizo-and-bean-hotpot","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/main-course-recipes\/kale-chorizo-and-bean-hotpot\/","title":{"rendered":"Kale, chorizo and bean hotpot"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>120g chorizo, sliced<\/li>\n<\/ul>\n<ul>\n<li>1 onion, sliced<\/li>\n<\/ul>\n<ul>\n<li>1 carrot, chopped<\/li>\n<\/ul>\n<ul>\n<li>2 cloves garlic, chopped<\/li>\n<\/ul>\n<ul>\n<li>pinch of chilli flakes<\/li>\n<\/ul>\n<ul>\n<li>1 baking potato, peeled and cubed<\/li>\n<\/ul>\n<ul>\n<li>1 large tomato, chopped<\/li>\n<\/ul>\n<ul>\n<li>600ml chicken stock<\/li>\n<\/ul>\n<ul>\n<li>1 x 400g beans, drained and rinsed&nbsp;(haricot, cannellini, butter beans&nbsp;would all work well)<\/li>\n<\/ul>\n<ul>\n<li>80-100g kale, chopped<\/li>\n<\/ul>\n<ul>\n<li>fresh parsley to garnish (optional)<\/li>\n<\/ul>\n<ul>\n<li>&nbsp;<\/li>\n<\/ul>\n<ul>\n<li>&nbsp;<\/li>\n<\/ul>\n<ul>\n<li>&nbsp;<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>In a large pot, fry the chorizo in a little olive oil until it starts to go crispy and releases its lovely red oil. Remove with a slotted spoon and set aside.<\/p>\n<p>Add the onion and carrot to the pan and fry, stirring until they start to soften. Next add the chilli, garlic and potato and mix well. Fry for a few minutes. Return the chorizo to the pan along with the tomato and stock. Bring to the boil and simmer, uncovered, until the potatoes are tender.<\/p>\n<p>Add the drained beans and the kale with a pinch of salt and some black pepper and simmer for 5-6 minutes until the kale has wilted and is tender. Add the parsley and mix through.<\/p>\n<p>Serve in big bowls with crusty bread and eat with a spoon! It&#8217;s great reheated the next day and leftovers are ideal to take to work for lunch.
