{"id":373,"date":"2011-12-07T09:59:21","date_gmt":"2011-12-07T09:59:21","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/07\/moroccan-chickpea-and-lentil-soup\/"},"modified":"2011-12-07T09:59:21","modified_gmt":"2011-12-07T09:59:21","slug":"moroccan-chickpea-and-lentil-soup","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/rest-of-the-world-recipes\/moroccan-chickpea-and-lentil-soup\/","title":{"rendered":"Moroccan chickpea and lentil soup"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 tbsp olive oil<\/li>\n<li>1 onion, sliced<\/li>\n<li>2 cloves garlic, chopped<\/li>\n<li>1 tsp grated fresh ginger<\/li>\n<li>1 red chilli, chopped<\/li>\n<li>quarter tsp turmeric<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>pinch of ground cinnamon<\/li>\n<li>pinch of saffron<\/li>\n<li>1 x 400g tin chopped tomatoes<\/li>\n<li>1 tsp sugar<\/li>\n<li>100g green lentils<\/li>\n<li>900ml vegetable stock<\/li>\n<li>1 x 400g tin chickpeas, drained<\/li>\n<li>fresh coriander or parsley (optional)<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Another winter warmer, full of spicy goodness! Great for lunch on a snowy day&#8230;<\/p>\n<p>Fry the onions in the oil in a large pan over a gentle heat until soft and slightly caramelised &#8211; about 15 minutes.<\/p>\n<p>Add the garlic, ginger and chilli and fry for a few minutes. Then add the spices and a pinch of salt and gently fry for a minute or two. Next add the tomatoes, sugar, lentils and stock. Bring to the boil, cover&nbsp;then simmer for 20-25 minutes until the lentils are tender.<\/p>\n<p>Add the drained chickpeas, bring back to the boil then reduce heat and simmer for 5 minutes or so. Add the fresh herbs if using and a grind or two of black pepper.
