{"id":400,"date":"2012-04-14T12:38:38","date_gmt":"2012-04-14T12:38:38","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2012\/04\/14\/mango-chicken\/"},"modified":"2012-04-14T12:38:38","modified_gmt":"2012-04-14T12:38:38","slug":"mango-chicken","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/asian-recipes\/mango-chicken\/","title":{"rendered":"Mango chicken curry"},"content":{"rendered":"<p><strong>Serves<\/strong><br \/>\n4<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n30 mins<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Groundnut oil<br \/>\na few curry leaves (dried or fresh)<br \/>\n3 cardamom pods, bashed<br \/>\n2 bay leaves<br \/>\nhalf tsp cumin seeds<br \/>\n4cm piece cinnamon stick<br \/>\n1 large onion, finely chopped<br \/>\n1 tbsp grated fresh ginger<br \/>\n4 cloves garlic, chopped<br \/>\n1 green chilli, finely chopped<br \/>\n1 tsp ground coriander<br \/>\nhalf tsp turmeric<br \/>\nhalf tsp ground cumin<br \/>\n4 skinless chicken breasts (about 500g), cut into bite-sized pieces<br \/>\n1 mango (not too ripe), peeled and chopped<br \/>\n1 tin coconut milk<br \/>\nsalt and black pepper<br \/>\nfresh coriander to garnish (optional)<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>This is a really tasty chicken curry &#8211; creamy, fragrant and slightly sweet from the mango.<\/p>\n<p>Heat a large heavy-based pan over a medium heat and add the oil, about 3 tbsp. Add the curry leaves and the whole spices and fry for about 30 seconds.<\/p>\n<p>Add the onion and and a pinch of salt and gently fry over a low heat for about 10 minutes, stirring frequently, so that the onion softens and changes colour.<\/p>\n<p>Add the garlic, ginger and chilli and fry for a further 5 minutes.<\/p>\n<p>Add the ground spices and fry for a few minutes more. Don&#8217;t let the spices burn or they will take on a bitter flavour.<\/p>\n<p>Next add the chicken with another pinch of salt and stir well until the meat is well coated with the spice mixture.<\/p>\n<p>Set aside a couple of tablespoons of the chopped mango. Put the remaining mango in a food processor or blender and whizz to a smooth puree.<\/p>\n<p>Add the pureed mango to the curry. Mix well then add the coconut milk. Give everything a good stir and add a grind of black pepper. Bring to the boil, reduce the heat and simmer for about 15 minutes until the chicken is tender.<\/p>\n<p>Taste and add more salt if needed. Serve garnished with the chopped mango and coriander if using.
