{"id":401,"date":"2012-04-21T16:34:47","date_gmt":"2012-04-21T16:34:47","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2012\/04\/21\/fish-pie-with-potato-and-celeriac-topping\/"},"modified":"2012-04-21T16:34:47","modified_gmt":"2012-04-21T16:34:47","slug":"fish-pie-with-potato-and-celeriac-topping","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/british-recipes\/fish-pie-with-potato-and-celeriac-topping\/","title":{"rendered":"Fish pie with potato and celeriac topping"},"content":{"rendered":"<p><strong>Serves<\/strong><br \/>\n4<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n45 mins<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>750g celeriac, peeled and roughly chopped<br \/>\n800g potatoes, peeled and roughly chopped<br \/>\n100g butter<br \/>\n375ml milk<br \/>\n600g leeks, thickly sliced<br \/>\n35g plain flour<br \/>\n1 kg fish (you can use just white fish or mixture of your choice)<br \/>\n2 tsp lemon juice<br \/>\nfresh chives and parsley, chopped<br \/>\nsalt and white pepper<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>The celeriac adds a\u00a0little twist\u00a0to the traditional potato topping for this fish pie. Yummy.<\/p>\n<p>Boil the potato and celeriac in salted water until soft. Drain and mash with 25g of the butter. Add a little milk too\u00a0if you like but watch the mixture does not become sloppy. Season to taste.<\/p>\n<p>Meanwhile heat 60g of the butter in a pan, add the leeks and cook, covered, until soft. Add the flour and cook, stirring, for 2 minutes. Gradually add the milk and bring to the\u00a0boil, stirring constantly.<\/p>\n<p>Add the fish to the pan and simmer, covered, for 3 minutes. Gently stir in the lemon juice, herbs and seasoning. Try\u00a0not to break up the fish too much.<\/p>\n<p>Preheat the oven to 220C. Spoon the fish mixture into an ovenproof dish. Melt the remaining butter.
