{"id":421,"date":"2012-07-22T17:56:18","date_gmt":"2012-07-22T17:56:18","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2012\/07\/22\/pasta-with-broccoli-anchovy-and-chilli\/"},"modified":"2012-07-22T17:56:18","modified_gmt":"2012-07-22T17:56:18","slug":"pasta-with-broccoli-anchovy-and-chilli","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/italian-recipes\/pasta-with-broccoli-anchovy-and-chilli\/","title":{"rendered":"Pasta with broccoli, anchovy and chilli"},"content":{"rendered":"<p><strong>Serves<\/strong><br \/>\n1<\/p>\n<p><strong>Cooking time<\/strong><br \/>\n20 mins<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n80-100g short pasta<br \/>\nolive oil<br \/>\n2-3 anchovies (from a jar or tin)<br \/>\nsmall clove garlic, chopped<br \/>\npinch of dried chilli flakes<br \/>\n6-8 small florets of broccoli<br \/>\n1 tomato, chopped<br \/>\nchopped parsley<br \/>\nsqueeze of lemon juice<br \/>\nblack pepper<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Perfect for lunch or a quick weeknight tea.<\/p>\n<p>Cook the pasta in plenty of boiling salted water.<\/p>\n<p>Pour a good amount (1-2 tbsp) olive oil into a small frying pan. Keep the heat low. Add the anchovy and, using a wooden spoon, mash it up as it starts to heat. When it just starts to sizzle, add the garlic and chilli flakes. Keep the heat low and fry gently for a minute or two. Don&#8217;t let the garlic brown.<\/p>\n<p>Turn the heat up a little and add the broccoli. Mix everything well together and then add the tomato. Simmer, covered, for 5 minutes or until the broccoli is just al dente. If it starts to dry out, add a tablespoon or so of the pasta cooking water.<\/p>\n<p>When the broccoli is tender, squeeze in the lemon juice and add the parsley and a good grinding of black pepper. You won&#8217;t need salt as the anchovies are very salty.<\/p>\n<p>Drain the pasta and add to the frying pan. Mix everything well together and serve immediately. Parmesan optional.
