{"id":47,"date":"2011-12-10T23:36:46","date_gmt":"2011-12-10T23:36:46","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/10\/thai-fish-cakes-mels\/"},"modified":"2011-12-10T23:36:46","modified_gmt":"2011-12-10T23:36:46","slug":"thai-fish-cakes-mels","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/asian-recipes\/thai-fish-cakes-mels\/","title":{"rendered":"Thai fish cakes (Mels)"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"style15\">250g-300g White fish fillets (eg haddock, pollock), chopped <\/li>\n<li> 2 Cloves garlic, peeled and roughly chopped<\/li>\n<li> 5cm Ginger, peeled and chopped<\/li>\n<li> 1 Stalk lemongrass, outer leaves removed and white part chopped <\/li>\n<li> 3 Spring onions, finely chopped<\/li>\n<li> 1 Red chilli, roughly chopped<\/li>\n<li> Fresh coriander<\/li>\n<li> 1 tbsp Groundnut oil <\/li>\n<li> 3 tsp Fish sauce<\/li>\n<li> Half a tsp salt <\/li>\n<li> Zest of 1 lime<\/li>\n<li> 1 tsp Sugar<\/li>\n<li> 1 Egg lightly beaten<\/li>\n<li> Groundnut oil for frying<\/li>\n<li> Salad leaves, lime wedges and sweet chilli sauce to serve <\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Into a food processor put the garlic, ginger, lemongrass, spring onion, chilli, coriander and the tbsp oil. Pulse until it is well chopped up.<\/p>\n<p> Add the fish, fish sauce, salt, lime zest, sugar and egg and whizz until it forms a smooth paste. Scoop out into a bowl and, using your hands, pick up the mixture and repeatedly through it against the side of the bowl. Do this for 3-4 minutes (this thickens and aerates the mixture).
