{"id":6,"date":"2011-12-10T20:30:03","date_gmt":"2011-12-10T20:30:03","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/10\/aloo-gobi\/"},"modified":"2011-12-10T20:30:03","modified_gmt":"2011-12-10T20:30:03","slug":"aloo-gobi","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/curry-recipes\/aloo-gobi\/","title":{"rendered":"Aloo gobi"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>Small head of cauliflower or 1\/2 a big one, cut into large florets, <\/li>\n<li> Splash of groundnut oil, <\/li>\n<li> 1 tbsp Black mustard seeds, <\/li>\n<li> Large pinch asafoetida (or 1 sml onion finely chopped), <\/li>\n<li> 12 Curry leaves, pulled off the stalk (can use dried), <\/li>\n<li> Half tsp ground turmeric, <\/li>\n<li>4 Medium sized potatoes, peeled and cut into chunks, <\/li>\n<li> Big handful frozen peas, <\/li>\n<li> 3 Chillies, seeded and chopped, <\/li>\n<li> Small bunch fresh coriander, chopped, <\/li>\n<li> Coconut shavings (optional)<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Bring a pot of salted water to the boil and add cauliflower. Bring back to the boil for 1 minute then remove the florets. Keep the cooking water to one side.<\/p>\n<p> Heat a wide pan big enough to hold all the ingredients at once. Add a splash of oil and when it&#8217;s hot add the mustard seeds, asafoetida\/onions, curry leaves, chillies and turmeric. Fry for a few seconds then add the potatoes, just enough of the cauliflower water to cover them and some salt. Cover with a lid and simmer gently until the potatoes are just cooked.<\/p>\n<p> Add the peas and cauliflower, stir and replace the lid. Cook over gentle heat until everything is cooked and soft and the liquid is reduced.
