{"id":67,"date":"2011-12-11T02:41:50","date_gmt":"2011-12-11T02:41:50","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/11\/spicy-chicken-lentil-and-coconut-soup\/"},"modified":"2011-12-11T02:41:50","modified_gmt":"2011-12-11T02:41:50","slug":"spicy-chicken-lentil-and-coconut-soup","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/asian-recipes\/spicy-chicken-lentil-and-coconut-soup\/","title":{"rendered":"Spicy chicken, lentil and coconut soup"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/2 tsp each Fennel, cumin and coriander seeds<\/li>\n<li> 3 tbsp Oil<\/li>\n<li> 1 Leek, thinly sliced<\/li>\n<li> 2 Carrots, grated<\/li>\n<li> 2 Red onions, thinly sliced<\/li>\n<li> 2 Bay leaves<\/li>\n<li> 6 Cloves garlic, finely chopped<\/li>\n<li> 1 Red or green chilli, sliced<\/li>\n<li> 1 tbsp Chopped ginger<\/li>\n<li> 1 x 400g Can coconut milk<\/li>\n<li> 200g Red lentils<\/li>\n<li> 2 Chicken breast fillets, cubed<\/li>\n<li> Fresh mint<\/li>\n<li> 2 tbsp Fish sauce<\/li>\n<li> Fresh coriander<\/li>\n<li> Juice of 2 limes<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Dry roast seeds and crush lightly.<\/p>\n<p> Heat the oil in a large pan and add the leek, carrots, onion, bay leaves, 4 of the cloves of garlic, chilli, ginger and the spices. Cook over medium heat for 5 mins.<\/p>\n<p> Add the coconut milk then 4 cans of water and add the lentils and bring to the boil. Simmer uncover for 20 mins.<\/p>\n<p> Place the chicken, remaining garlic, mint and 2 tsp fish sauce and a quarter of the coriander in a food processor. Whizz until finely minced then chill for 10-15 mins. Roll into 30 small balls.<br \/>\n Add these to the soup, season with more fish sauce if necessary, and lime juice and simmer for 10 mins.
