{"id":74,"date":"2011-12-11T02:41:50","date_gmt":"2011-12-11T02:41:50","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/11\/thai-corn-cakes\/"},"modified":"2011-12-11T02:41:50","modified_gmt":"2011-12-11T02:41:50","slug":"thai-corn-cakes","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/asian-recipes\/thai-corn-cakes\/","title":{"rendered":"Thai corn cakes"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>275g can Sweetcorn<\/li>\n<li> 2 Garlic cloves<\/li>\n<li> 1 or 2 Shallots or 3-4 spring onions<\/li>\n<li> Small bunch coriander<\/li>\n<li> 1 tsp Caster sugar<\/li>\n<li> 1 tbsp Thai fish sauce<\/li>\n<li> 1 tsp Salt<\/li>\n<li> 1 tsp Black pepper<\/li>\n<li> 100g (half a cup) Plain flour<\/li>\n<li> 2 Large eggs<\/li>\n<li> 2-3 tbsp Groundnut oil for frying<\/li>\n<li> 100ml Sweet chilli sauce (bought or home made) <\/li>\n<li> 2 Spring onions, finely sgredded to garnish<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<p>Whizz half the sweetcorn in a food processor to a coarse puree. Chop the garlic, shallots and coriander quite finely. Add to the blender with the sugar, fish sauce, salt and pepper and whizz to a puree.<\/p>\n<p> Add the flour and whizz for 1 minute, then add the eggs and process for another 30 seconds. Tip into a bowl and fold through the remaining whole sweetcorn.<br \/>\n Heat half the oil in a heavy based non-stick frying pan. Drop four heaped tablespoons of batter into the pan and cook until golden, turning once. Remove and drain on kitchen paper.<\/p>\n<p>Keep warm while you make the rest of the cakes.
