{"id":81,"date":"2011-12-11T05:48:18","date_gmt":"2011-12-11T05:48:18","guid":{"rendered":"http:\/\/www.tezzatron.com\/loadsofrecipes\/2011\/12\/11\/vegetable-samosas\/"},"modified":"2011-12-11T05:48:18","modified_gmt":"2011-12-11T05:48:18","slug":"vegetable-samosas","status":"publish","type":"post","link":"https:\/\/loadsofrecipes.co.uk\/indian-recipes\/vegetable-samosas\/","title":{"rendered":"Vegetable samosas"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li><span class=\"style15\">2 Medium potatoes, peeled and cut into chunks<\/li>\n<li> 1 Onion, finely chopped<\/li>\n<li>A little groundnut oil <\/li>\n<li> Half a cup frozen peas<\/li>\n<li> Quarter cup of currants or sultanas<\/li>\n<li> 2 tbsp Chopped coriander<\/li>\n<li> 2 tbsp Lemon juice<\/li>\n<li> 1 tbsp Soy sauce<\/li>\n<li> 1 tsp Ground cumin<\/li>\n<li> Pinch of hot chilli powder (or half tsp chopped fresh chilli)<\/li>\n<li> Quarter tsp ground cinnamon<\/li>\n<li> 1 Packet (1kg) ready rolled puff pastry<\/li>\n<li> 1 Egg, beaten for glazing<\/li>\n<li> <em>To serve:<\/em><\/li>\n<li> 1 Cup yoghurt<\/li>\n<li> Quarter cup fresh mint, chopped<\/li>\n<li> Half tsp ground cumin<\/li>\n<li> Salt and pepper<\/li>\n<\/ul>\n<p> <strong>Method:<\/strong><\/p>\n<blockquote>\n<p>Cook the potatoes in a large pan of boiling salted wateruntil tender. Drain and leave to cool. When cool, chop finely.<\/p>\n<p> Fry the onion slowly in the goundnut oil until soft and slightly caramelised. Set aside.<\/p>\n<p>Heat the oven to 200C.<\/p>\n<p>Mix the potato with the onion, peas, currants or sultanas, coriander, lemon juice, soy sauce, cumin, chilli and cinnamon.<\/p>\n<p> Cut the pastry into rounds using a 10cm cutter. Place 1 tbsp of the mixture on one side of each round. Fold the pastry over to make a semi-circle. Press the edges together firmly with a fork (Top Tip &#8211; if the fork is sticking to the pastry, dip it into a little flour every now and then).<\/p>\n<p> Place the samosas on a baking tray and brush each one with the beaten egg. Cook in the oven for about 15 minutes or until golden brown and cooked through.<\/p>\n<p>To make the yoghurt and mint sauce &#8211; mix the yoghurt, mint and cumin togther in a small bowl.
